Quick and Easy Color Determination by UV Vis Spectroscopy for the Quality Check

This application note provides a standard method for determining the color of maple syrup using METTLER TOLEDO's EasyPlus UV/VIS spectrophotometer.

 

Maple syrup is a concentrated syrup made from the sap of maple tree. It is commonly used as a sweetener or flavoring agent in food products such as pancakes, waffles, french toast, oatmeal, or porridge.

The United States Department of Agriculture (USDA) describes a uniform classification grading system for maple syrup by measuring its color using a spectrophotometer.

The current application is developed to measure the color of maple syrup according to USDA by measuring the percentage transmittance at 560 nm using METTLER TOLEDO's EasyPlus UV/VIS spectrophotometer.
