In this application note, the concentration of anthocyanogens, which are important in beer stability, is determined using a UV/VIS Excellence spectrophotomemter.

How are anthocyanogens in beer measured spectrophotometrically? 

Anthocyanogens are low molecular phenolic compounds, which rather act reducing. They are a special form of anthocyanidins, which are the color giving part of anthocyanins, a group of plant colorants with a phenolic basis. Anthocyanogens adsorb to polyamide powder and in the precence of hot hydrochloric acid they are converted into red colored anthocyanidins. This red colored solution is finally measured by a spectrophotometric method, to measure its concentration. For more information about this application, proceed to download the page.
