Turbidity sensors for beer production typically employ two measurements: scattered light at 25° and at 90°. The former is for detecting larger particles such as yeast cells, and the latter measures haze caused by proteins and beta-glucans. METTLER TOLEDO's InPro 8630ie sensors measures at both these angles and, in addition, measures the transmission of blue light to measure color.
