Dissolved oxygen (DO) in beer production is key for small and large breweries. For one of America's most successful craft brewers, Stone Brewery, DO measurements are helping them brew their high quality and unique beers. Stone Brewing, founded in San Diego in 1996, is the ninth-largest craft brewer in the US and operates a second US brewery in Richmond, Virginia. In 2015 they became the first American craft brewer to build their own brewery in Europe with Stone Brewing – Berlin.

When Stone Brewing was building their Richmond facility, they needed to maintain their reputation of very high quality beers with a consistent taste. To ensure only beer with minimal dissolved oxygen content would reach the filling lines, the Richmond brewmaster wanted reliable, low maintenance, in-line oxygen measurement. They also wanted in-line pH measurement to monitor their clean-in-place (CIP) process and the final rinse after CIP.

METTLER TOLEDO offered Stone Brewing the necessary in-line equipment to meet the brewmaster's expectations.
 

The METTLER TOLEDO optical trace level DO sensor, InPro 6970i, can detect dissolved oxygen down to 2 ppb in beer and water. It has a very fast response time, which minimizes beer losses. The sensing element in the sensor is immune to pressure shocks and extreme CIP cycle conditions. Moreover, it requires no polarization time and no electrolyte.

The InPro 6970i sensor is equipped with Intelligent Sensor Management (ISM). ISM is METTLER TOLEDO's digital sensor technology that combines the advantages of in-line analytical measurements with modern technology. Among its many features, ISM monitors probe “health” and predicts when sensor calibration, cleaning, and replacement should be performed. All system data including calibration and diagnostics information are stored on the sensor.
