Iodine Content Determination in Edible Salt

This application note provides a detailed method to determine the iodine content in edible salt by redox titration using fully automated Excellence Titrators. The method is in accordance with existing regulatory standards, namely European and Indian standards.

Why Is Iodine Determination Essential?

Iodine is an essential micronutrient required in a trace amount for normal functioning and development of the human body. Iodine is used by the thyroid gland in the production of thyroid hormone. People consuming saltwater fish usually are not iodine deficient whereas in the regions away from the ocean there is a shortage of indigenous iodine. Iodine deficiency can cause functional and developmental abnormalities such as endemic goiter, mental retardation, abortions, deaf-mutism, retarded physical growth, brain damage, etc.  Today, iodized salts are commonly used to prevent iodine deficiency. However, there is a concern with the excessive intake of iodine levels as it can cause hyperthyroidism, goiter, and thyroid papillary cancer. Therefore, the determination of iodine content in food becomes essential.
