Importance of Water Content Determination in Turmeric

Turmeric is a common spice used for flavoring, coloring, and preserving foods. It is extensively used as an immunity booster in traditional and ayurvedic medicines for its anti-inflammatory and antioxidant properties. However, the presence of water in turmeric may promote the growth of bacteria and yeast leading to deterioration and reduction of its stability and shelf life. Hence the determination of water content in turmeric powder is of prime importance.

How to Determine Water Content in Turmeric?

This application note is based on the determination of the water content using Karl Fischer titration. The current method promotes external extraction over direct injection as the sample releases water slowly. Gas-phase extraction of the sample using an InMotion™ KF Oven Autosampler technique is presented. The released water is monitored as a function of temperature to find the optimal gas-phase extraction temperature.

An External SmartChemical Reader is used to transfer the reagent information to the titrator by scanning a smart chemical tag on the bottle to eliminate transcription errors. This is much faster and more convenient than manual entry.

This Application Note Includes

  • An introduction to the method
  • Sample preparation and procedures
