How are anthocyanogens in beer measured spectrophotometrically?
Anthocyanogens are low molecular phenolic compounds, which rather act reducing. They are a special form of anthocyanidins, which are the color giving part of anthocyanins, a group of plant colorants with a phenolic basis. Anthocyanogens adsorb to polyamide powder and in the precence of hot hydrochloric acid they are converted into red colored anthocyanidins.
